Eggplant Appetizer
An easy to make starter.
- 2 eggplants (aubergines)
- garlic
- cilantro
- mayonnaise
Slice the eggplants thinly. Fry the slices in vegetable oil. Allow the eggplant to cool and then place in a bowl, sprinkling each layer with the cilantro and garlic as well as some mayonnaise. Cover the dish. Refrigerate for 2 days.
Chicken Kiev
A world-renowned and very popular Russian recipe.
- ½ cup butter
- 3 garlic cloves - crushed
- ¼ lemon juice
- 2 chicken breasts
- 2 eggs
- ½ cups onion - chopped
- 3 cups bread crumbs
- salt
Sauté garlic in the butter along with the lemon juice and seasonings. Inject the mixture into the chicken breasts. Beat melted butter together with eggs. Combine onions and crumbs in a separate dish. Submerge the breast in the egg and then dip in the crumbs. Bake chicken breasts for 30 minutes at 350ºF. Enjoy!
Buglama
A juicy lamb stew that everyone will enjoy.
- 1 kg lamb
- 50 g lamb fat
- 400 g onion - finely chopped
- 1 garlic clove
- 15 g cayenne
- assorted spices
- Salt
Slice the lamb into 30g pieces and stew it in the fat for approximately 15 minutes. Add the onion. Stew until the lamb is tender. Pour a broth made with the spices over the lamb.
Moscow Ponchiki
A scrumptious Russian donut recipe for teatime.
- 1½ cups flour
- 2 tbsp sugar
- 1 tbsp butter
- 1 egg
- ½ cup milk
- ½ tsp baking powder
- 100g oil
- cinnamon powder
Sift flour, baking powder and cinnamon into a bowl. Beat eggs along with sugar and then add the butter and milk. Stir. Slowly add the flour mix while you continue to stir. Knead the resulting dough. Roll the dough out to about 1/5" thick. Cut round shapes out and make a hole in the middle so that you end up with rings. Fry in hot oil until golden-brown. Sprinkle powdered sugar on top.
